Grimaldi’s sits right under the Brooklyn Bridge in DUMBO, which already puts it in one of the better spots in New York before you even talk about the food. The red-and-white gingham tablecloths, wine bottle chandeliers, black-and-white photographs on the walls, jukebox in the corner, it all feels like it has been exactly this way for a long time, because it more or less has. The coal-fired brick oven is visible from the dining room and the pies come out with a char on the underside that gas ovens simply cannot replicate. The plain Margherita is the place to start and also where the kitchen has the least to hide behind. Fresh handmade mozzarella, house sauce made from a recipe passed down through generations, and dough prepared fresh daily. The crust has a slight chew toward the center and a proper crunch at the edge, with char marks from the coal fire that add a subtle smokiness to the whole thing. We also did a pepperoni pie and a white pizza with garlic, pesto, mushrooms, and white onion, which was the table’s favorite. The cannoli showed up for dessert, fried pastry shell, sweet ricotta filling, chocolate chips, and that’s about all it needed to be. They don’t serve slices here, only whole pies, so come with people or come hungry. Walk across the Brooklyn Bridge from Manhattan and have lunch here. That is a day that works.
